Spaghetti with spelled Bolognese

Ingredients for 4 servings:

  • 1 onion(s)
  • 2 cloves garlic
  • 120 g spelt, medium-coarsely ground
  • 3 tbsp olive oil
  • 1 pt. Tomato(s), pureed
  • 1 tsp sea salt
  • 1 tsp vegetable broth
  • Paprika powder
  • 500 g pasta (spaghetti)
  • Parmesan
  • basil
  • marjoram
  • oregano
  • Cayenne pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Finely chop the onion and garlic cloves and sauté in olive oil. Add the spelt groats and lightly toast while stirring. Top with the passata and cook for about 25 minutes, stirring frequently. Season with salt, spices, and vegetable stock. Cook the spaghetti in salted water until al dente. Serve with the spelt Bolognese and freshly grated Parmesan cheese.
