Spicy spaghetti with tomato and mozzarella

Ingredients for 2 servings:

  • some olive oil
  • 2 cloves garlic
  • 1 chili pepper(s)
  • 240 g tomatoes, peeled, fresh or from a can
  • 160 g pasta (spaghetti, preferably whole wheat)
  • Mozzarella
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook the pasta in a little salted water. Heat the olive oil in a large, non-stick pan, finely chop the chili and garlic, and fry briefly (don’t let the garlic burn, as it will taste bitter). Add the peeled tomatoes and simmer over medium heat for about 5-7 minutes. Add the mozzarella (cut into small cubes), mix, and let it melt (for another 5 minutes). Finally, add the cooked pasta and mix everything thoroughly. Season with salt and pepper at the table if necessary.
