Peanut Carrot Soup

Ingredients for 1 servings:

  • 1 small onion(s)
  • 400 g carrot(s)
  • 500 ml chicken stock
  • 40 g rice
  • 1 tbsp peanut butter
  • Cayenne pepper
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Chop the onion, peel and finely chop the carrots, add both to a pot along with the stock, bring to a boil, and simmer for 15-20 minutes. Puree the soup, add the rice, and simmer until the rice is tender. Stir in the peanut butter and season with cayenne pepper, salt, and pepper. WW – Suitable: 5 points.
