Healthy apple pancakes

Ingredients for 6 servings:

  • 300 g whole wheat flour
  • 1 pinch(s) of sweetener (Stevia with 99.9% Rebaudioside A)
  • 3 m.-sized eggs
  • ½ lemon(s), the juice
  • 500 ml milk, lactose-free (1.5% fat)
  • 2 apples
  • some rapeseed oil for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 14 minutes

with stevia, whole wheat flour and lactose-free

Combine all ingredients except the apples in a bowl one at a time and mix with a hand mixer until smooth. Cut the apples into 5–10 mm cubes and stir into the batter. Then fry in batches in a non-stick pan with a little rapeseed oil over medium heat. When the batter starts to set, flip it over. The pancakes are delicious on their own, but they also taste great with Nutella, compote, or jam.
