Biting carrot salad with almonds, lemon and apple

Ingredients for 4 servings:

  • 1 kg carrot(s), organic
  • 2 large apples
  • 1 half lemon(s)
  • 1 tsp dill
  • 1 tbsp rapeseed oil
  • 2 tbsp vinegar
  • 100 g almond flakes

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Delicious, healthy, vegetarian and simple

Squeeze the juice from half a lemon into a cup and set aside. Peel the carrots, trim the ends, and grate them directly into a bowl using a vegetable grater. Wash, core, and coarsely grate the apples. Add them to the carrots. Add the dill, oil, vinegar, and almond slivers. Finally, squeeze the juice from half a lemon generously into the bowl and mix everything well. Note: You can also omit the oil and/or almonds (it’s less calorie-dense and still tastes delicious). You can also use whole almonds and simply chop them yourself (using a mortar and pestle or a blender works wonderfully), but you’ll need to prepare them beforehand. Whole almonds are cheaper.
