Ingredients for 4 servings:

  • 1 large zucchini
  • 300 g feta cheese
  • 200 g bacon, diced
  • 100 g Parmesan
  • 1 large onion(s)
  • 3 spring onions
  • 1 large garlic clove(s)
  • 3 eggs
  • 150 g flour
  • 1 packet of baking powder
  • 70 ml oil
  • 125 ml milk
  • Pepper, mixed (crushed)
  • Salt
  • chives
  • Parsley

Heat some oil in a pan, add the sliced ​​and halved zucchini, diced onions, and sliced ​​leeks, and brown. Finally, add the bacon cubes and finely chopped garlic, but don’t overcook them. Dice the feta and grate the Parmesan cheese. Combine the flour, baking powder, eggs, oil, and milk, and stir in the zucchini, onion, garlic, leek, and bacon mixture from the pan. Then add the feta cheese, Parmesan cheese, salt (not too much—the bacon already has plenty of flavor), pepper (freshly ground mixed peppercorns are delicious), chives, and parsley, and mix. This batter goes into a baking pan/jar (6 x 435 ml – fill the batter approximately halfway). Bake at 180°C (top and bottom heat) for about 35-45 minutes.
