Ingredients for 4 servings:

  • 1 kg potatoes, waxy
  • 1 kg clarified butter
  • Salt and pepper, coarse

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Heat the clarified butter in a large pot (or deep fryer). Thinly slice the potatoes and pat dry with a kitchen towel. Deep-fry the potato slices, one at a time, until golden brown. Drain on kitchen paper. Season with salt and pepper.
