Marinated eggplants

Ingredients for 2 servings:

  • 1 eggplant(s)
  • 4 tbsp oil (fruity olive oil)
  • 1 tsp sugar, (just)
  • 1 clove(s) garlic
  • 3 tbsp flat-leaf parsley, chopped
  • salt and pepper

Instructions

Working time approx. 10 minutes; Rest period approx. 1 day; Total time approx. 1 day 10 minutes

Grill the sliced ​​eggplant (salted, washed, or dried, if desired) in the oven for about 20 to 25 minutes. Brush each slice with olive oil twice. The longer the eggplant browns, the more the sugar caramelizes (…I’ve read…). Then let it marinate for a day in a mixture of garlic, olive oil, parsley, salt, and pepper (use only a little of each). The eggplant slices may be a bit dry after grilling—the marinating will correct this! Ideal on an Italian appetizer platter!
