Ingredients for 2 servings:
- 2 small zucchini
- oil
- 2 tbsp lemon juice
- 2 cloves garlic, crushed
- 4 tbsp olive oil
- salt and pepper
- oregano
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Wash the zucchini and cut into evenly thick slices. Brown them on both sides in hot oil in a pan and place on a plate. Meanwhile, combine the lemon juice, oil, garlic, salt, pepper, and oregano. Line the bottom of a small bowl with the fried zucchini and drizzle with the oil mixture. Then layer more zucchini and the mixture, finishing with the oil mixture. Let it sit in the refrigerator overnight. A great summer antipasti dish.
