Red wine pear in balsamic vinegar

Ingredients for 4 servings:

  • 2 bulb(s), large, firm
  • 300 ml wine, red, e.g. Chianti classico
  • 50 g sugar
  • 3 cl balsamic vinegar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel the pears, halve them, and core them. Caramelize the sugar with a little water, then add the pear halves and deglaze with vinegar and red wine (careful, it will splatter and can take your breath away). Simmer until soft. Once cooled, transfer to a plastic bag, pour over the liquid, and refrigerate for 24 hours. Before serving, slice the pear halves into a fan-shaped shape. Delicious with baked mozzarella or baked goat cheese.
