Ingredients for 1 servings:
- 1 m.-sized banana(s)
- 1 m.-sized apple
- 2 eggs
- 1 tbsp, heaped chia seeds
- 125 g ground almonds
- 30 ml coconut oil, or approx. 24 g coconut fat
- 40 ml water
- 1 tsp, heaped cream of tartar baking powder
- 2 tsp, heaped vanilla powder
- 1 tbsp cinnamon
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
for 12 small muffins without milk and without sugar
Preheat the oven to 175°C. Mash the banana, grate the apple, and mix well with the remaining ingredients. Pour the ingredients into the muffin tin, filling the holes no more than 3/4 full. Bake the muffins on the middle rack at 175°C for about 15-20 minutes. Test with a skewer. The banana flavor will be a bit more pronounced; if you prefer more apple flavor, add half an apple.
