Fitness chocolate muesli muffins

Ingredients for 1 servings:

  • 100 g muesli (wholemeal muesli), e.g., grape-nut, alternatively wholemeal flour
  • 1 egg(s)
  • 1 banana(s)
  • 100 g quark
  • 50 g oil
  • 50 ml buttermilk or milk
  • 2 tsp honey, liquid
  • 50 g dark chocolate, grated
  • 1 packet of vanilla sugar
  • 1 ½ tsp baking powder
  • 1 dashes bitter almond flavoring
  • n. B. Desiccated coconut

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Super fluffy, moist and healthy muffins, quick to make, perfect for brunch or a child’s birthday party

Preheat the oven to 180°C. Grind the muesli into flour in a blender. Grate dark chocolate if desired and chop the banana. Mix all ingredients except the muesli and chocolate. Add the muesli and finally fold in the chocolate. Pour the mixture into muffin tins and bake at 180°C for about 20 minutes. Makes about eight muffins.
