- 1 bunch of basil
- 50 g almonds

- 100 g cocktail tomatoes
- 2 carrots
- 150 g whole wheat pasta
- 1 clove(s) garlic
- 1 shallot(s)
- 2 tbsp, heaped sunflower seeds
- 2 tbsp, heaped pumpkin seeds

Perfect for on the go
Heat water in a pot and cook the pasta according to the package instructions. Finely puree the avocado flesh with lemon juice, almonds, garlic, basil, and olive oil and season with salt and pepper. Peel and chop the peppers, carrots, shallots, and tomatoes, and fry them in a pan for about 2 minutes. Rinse the pasta, mix well with the avocado paste and vegetables, and leave to marinate in the refrigerator overnight. The salad is perfect for on the go: simply pack it in a Tupperware container and enjoy it during your lunch break. If you like, you can also mix the salad with cheese or other vegetables.
