Ingredients for 4 servings:
- 4 trout, fresh or thawed
- 8 sprigs of parsley
- 12 garlic cloves
- 12 tbsp olive oil
- 4 tsp lemon juice
- salt and pepper

Cut the trout’s belly open lengthwise and remove the entrails. Quarter the garlic and roughly chop the parsley. Rub each trout inside and out with salt and pepper (don’t be too sparing), spritz with lemon juice, and stuff the bellies with garlic. Line a baking dish with aluminum foil so that the edges extend well over the sides of the dish. Pour half of the olive oil onto the foil, place the trout on top, drizzle with the other half of the olive oil, and sprinkle with chopped parsley. Seal the edges tightly and bake in the oven at 200°C for 20-25 minutes.
