delicious and healthy side dish – even children like to eat it
Boil the potatoes and then mash them. Finely chop the onions in a food processor. Combine all ingredients and blend with a hand mixer until smooth. Season to taste. Let the batter rest for about 30 minutes. Bake in a waffle iron and serve while still warm. This batter makes about 6 waffles. I estimate two per person if there are any side dishes. They go well with a quark dip and salad. With hollandaise sauce, the waffles are a (calorie) dream. We usually serve them with meatloaf and cauliflower with hollandaise sauce. You can also easily replace some of the potatoes with carrots. Very tasty and even healthier!
