Ingredients for 4 servings:

  • 6 large carrots
  • 100 g almond flakes
  • 1 garlic clove(s)
  • lemon juice
  • olive oil
  • salt and pepper
  • 100 g sheep’s cheese

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

with lemon and almond dressing

Peel the carrots, slice them thinly, and cook them in salted water until al dente. Roast the almonds in a dry pan until light brown. Dice the feta cheese. Make a dressing with lemon juice, olive oil, salt, pepper, and garlic. Mix the carrots, feta cheese, and flaked almonds with the dressing and let it marinate overnight. A resounding success for brunch!
