Steamed spinach with fennel

Ingredients for 4 servings:

  • 500 g fresh leaf spinach
  • 4 fennel bulbs
  • 4 tbsp olive oil
  • 40 g brown cane sugar
  • 150 ml dry white wine
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Wash the spinach and shake dry. Wash the fennel and roughly chop it. Heat the olive oil in a large pot. Sauté the fennel over medium heat for 4-5 minutes until golden brown. Sprinkle the fennel with sugar and let it caramelize. Deglaze with the white wine and simmer until almost evaporated. Gradually stir in the spinach and let it wilt. Heat for another 2-3 minutes, stirring slowly, and season with salt and pepper. Serve warm with the remaining white wine.
