Ingredients for 1 servings:

  • 3 eggs
  • 1 large banana(s), very ripe
  • 125 g margarine
  • 1 tsp baking powder
  • 250 g flour
  • 250 ml milk
  • 1 lemon(s), zest, optional

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

First, separate the eggs. Beat the egg whites until stiff peaks form and set aside. Then, beat the egg yolks until frothy. Stir in the mashed banana, margarine, and lemon zest, if desired. Stir the flour, baking powder, and milk alternately into the batter. Finally, fold in the egg whites. Fry the batter in a waffle iron in batches until golden brown. This batter yields approximately 10 waffles, depending on the waffle iron. My 1.5-year-old son loves these waffles.
