Ingredients for 1 servings:

  • 3 large bananas, ripe
  • 1 apple
  • 150 g spelt flour
  • 150 ml water
  • 50 g melt-in-the-mouth flakes, 3-grain flakes or other, e.g. oats
  • ½ pack of baking powder
  • 1 tbsp tiger nut flour, optional
  • Fat for the mold

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

without sugar, for 12 pieces

Blend the bananas and apple in a blender. You can also use pears, blueberries, or other fruit. Then add the water. Now pour the liquid mixture into a bowl and add the flour, baking powder, and tiger nut flour. Finally, stir the instant flakes into the mixture until the batter is nice and sticky. Pour the batter into the greased muffin tin and bake in a preheated oven at 190°C for about 30-35 minutes, until the skewer test shows that the muffins are cooked through. My daughter loves the muffins because they don’t fall apart or crumble. We’ve been eating them since she was 11 months old. Since they contain no sugar, milk, or eggs, I’ve also offered them in the mother-child group, and the little ones love them. I always make 12.
