Gluten-free ladyfingers

Ingredients for 1 servings:

  • 2 egg yolks
  • 1 egg white
  • 30 g sugar
  • 10 g vanilla pudding powder
  • 20 g flour, gluten-free, e.g. Mix C from Schär
  • 10 g cornstarch

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Whisk the egg whites with 20g of sugar until stiff peaks form and set aside. Whisk the egg yolks with 10g of sugar and the custard powder until creamy. Add the stiffly beaten egg whites and gently fold in. Combine the flour with the cornstarch and gently fold into the cream mixture. Transfer the mixture to a piping bag and pipe sponge fingers onto a baking sheet. Bake at 160°C (320°F) for about 15 minutes.
