Ribbon noodles with peanut and coconut sauce

Ingredients for 4 servings:

  • 500 g tagliatelle pasta
  • 5 tbsp peanut butter
  • 600 g broccoli
  • 500 ml vegetable stock
  • 300 ml coconut milk
  • 4 tbsp soy sauce
  • 1 tsp brown sugar
  • ½ small jar of sambal oelek
  • 1 bunch of parsley
  • n. B. Salt
  • e.g. lime juice

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Divide the broccoli into small florets. Cook the tagliatelle according to the package instructions. Three minutes before the end of the cooking time, add the broccoli florets and cook for another three minutes until tender. Drain and refresh. For the sauce, combine the vegetable stock with the peanut butter, coconut milk, soy sauce, brown sugar, and sambal oelek. Heat and simmer for a few minutes. Season with salt and lime juice. Add the sauce to the tagliatelle and serve sprinkled with chopped parsley.
