Ingredients for 8 servings:

  • 2 packs of cheese, Patros with fine feta cubes
  • 150 g butter
  • 8 olives
  • 2 cloves garlic
  • 8 slice(s) cheese, Gouda
  • basil

Instructions

Working time approx. 20 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 20 minutes

Mix the Patros with the butter, finely chop the olives and basil, and press the garlic and add it. Preheat the oven. Place the 8 slices of Gouda cheese on a baking sheet lined with parchment paper, then arrange them side by side to form a large square. The edges should overlap slightly to keep the cheese together. Place the cheese in the oven for a short time and let the cheese melt slightly. This should take 1-2 minutes at most. Remove the baking sheet from the oven, spread the Patros mixture over the cheese (leaving about 4 cm free on one side, otherwise it will ooze out when rolled up), and then carefully roll up the other side using the parchment paper. Wrap the whole thing in aluminum foil and refrigerate for a few hours. A delicious accompaniment to baguette. If you place 2-3 basil leaves under the cheese before baking, it will look very decorative once rolled up.
