Baked carrots with apple

Ingredients for 1 servings:

  • 4 carrots
  • ½ apple
  • 1 tbsp lemon juice
  • 1 tsp lemon zest, grated
  • 2 tbsp butter, soft
  • 2 tbsp broth or water
  • e.g. parsley
  • salt and pepper
  • 75 g Gouda, grated

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Preheat the oven to 200 degrees Celsius (top/bottom heat). Peel the carrots and slice thinly. Wash the apple, quarter it, remove the core, and cut it into slices approximately 3 mm wide. Wash and finely chop the parsley. Place the carrot and apple slices in a baking dish (20 x 15 cm) and toss with the lemon juice and grated lemon zest. Distribute the butter evenly over the top, drizzle with broth or water, and sprinkle with parsley, salt, and pepper. Cover the baking dish with aluminum foil, place it in the preheated oven, and bake for approximately 20-25 minutes, until the carrots are tender. Remove the dish from the oven and remove the foil. Sprinkle the carrot and apple mixture with the grated cheese and bake in the oven (uncovered) for about 2-3 minutes, until the cheese is melted. Arrange on plates while still hot and serve with grilled meat, for example. Served with baguette, the vegetables taste very good even without meat.
