Ingredients for 2 servings:
- 2 salmon fillets
- 1 zucchini
- 1 bell pepper(s)
- 4 tbsp olive oil
- 4 tomatoes
- 1 clove(s) garlic
- some lemon juice
- salt and pepper
- Thyme, dried
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Dice the zucchini and bell peppers, heat the olive oil, and add the crushed garlic and the diced vegetables. Sauté for about 3 minutes. Then add the tomatoes and thyme. Let the vegetables simmer for about 5 minutes. Season the salmon fillets with salt and pepper and drizzle with lemon juice. Then fry the fish in the olive oil.
