Spinach pan with mushrooms

Ingredients for 2 servings:

  • 500 g fresh leaf spinach
  • 250 g mixed mushrooms
  • ½ bunch spring onions, chopped
  • 3 cm ginger, sliced
  • 2 red chili, sliced
  • 2 cloves garlic, sliced
  • 2 tbsp fish sauce
  • 250 ml vegetable stock
  • 2 tbsp olive oil
  • n. B. Pfeffer
  • n. B. Salt

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Slice the onions, garlic, ginger, and chilies. You can also chop everything if you like. Halve or quarter the mushrooms, depending on their size. Heat the oil in a wok. First, sauté the onions and mushrooms, then add the ginger, chilies, and garlic. Add the stock and fish sauce. Place the spinach on top of the vegetables and let it fall over medium heat. Mix everything well. Season with salt and pepper, if desired.
