Thuringian cucumber salad

Ingredients for 4 servings:

  • 3 cucumbers
  • 1 onion(s)
  • 5 tbsp mayonnaise
  • salt and pepper
  • Sugar
  • lemon juice
  • some dill (frozen)

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Family recipe

Wash the cucumbers. If you like, you can peel and deseed them. Then grate them using a square grater (use the slicing side). You don’t want to end up with whole slices! Place the cucumber mixture in a sieve and season with salt. Let it stand for about an hour so that the salt can draw the water out of the cucumbers. In the meantime, finely dice the onions. Then squeeze the cucumbers really firmly and mix with the onions, dill, and spices. Finally, fold in the mayonnaise a tablespoon at a time. The amount depends on the water content of the cucumbers. Stir occasionally to check that there is enough mayonnaise so that the cucumbers don’t end up swimming in the sauce. We always serve this cucumber salad with mashed potatoes and meatballs. It also tastes great with fish (fish fingers). It’s perfect for all children’s parties. Or with grilled meat – the sky’s the limit.
