Lamb's lettuce with red beans and feta cheese

Ingredients for 4 servings:

  • 1 gr. can/n beans, red
  • 500 g sheep’s cheese
  • 1 onion(s)
  • 2 garlic cloves
  • 2 tbsp vinegar (herb vinegar)
  • 4 tbsp olive oil
  • 1 tsp mustard, grained
  • 2 tbsp chives, in rolls
  • 500 g lamb’s lettuce

Instructions

Working time approx. 20 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 20 minutes

Rinse the beans in a sieve and drain. Dice the feta cheese. Finely dice the onion and garlic. Wash the lamb’s lettuce and let it dry thoroughly. Combine the feta cheese, onion, garlic, and beans. For the dressing, combine the mustard, vinegar, salt, and pepper, and stir in the oil. Mix into the salad. Let the salad marinate for a few hours. Just before serving, stir in the lamb’s lettuce. Sprinkle with chives.
