Ingredients for 2 servings:

  • 660 g potatoes, waxy
  • salt water
  • 150 ml soy milk (soy drink) or rice drink
  • 50 ml cream (soy cream)
  • 1 tbsp rapeseed oil
  • 1 tsp nutmeg
  • ½ tsp paprika powder, hot
  • some salt and pepper
  • 7 apples, green
  • 15 tsp sugar
  • 5 tsp lemon juice (concentrate)
  • 200 ml water

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

Mashed potatoes with apple sauce

Peel the apples and potatoes and cut into small cubes. Wash the potatoes and boil in lightly salted water for about 15 minutes. Place the apples in a small saucepan, mix with the sugar, lemon juice concentrate, and water, and boil over medium heat for about 10 minutes. Mash the apples in the pan with a fork or potato masher and let the mixture cool. Drain the potatoes in a sieve and let it drain. Meanwhile, mix the remaining ingredients and bring to a boil briefly in the pan. Remove the pan from the heat and add the potato pieces. Mash the potatoes with a potato masher. Serve the applesauce with the mashed potatoes.
