Tomato salad with balsamic honey dressing

Ingredients for 2 servings:

  • 500 g tomatoes
  • 15 g parsley
  • 1 m.-sized onion(s)
  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar, light or dark
  • 1 tbsp honey
  • 1 pinch of salt and pepper, black from the mill

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

For the dressing, combine olive oil, balsamic vinegar, salt, and pepper in a bowl and season to taste. Remove the stems from the tomatoes and rinse thoroughly under running water. Cut out the core. Cut the tomatoes into bite-sized cubes (do not deseed them) and add them to the bowl with the dressing. Finely dice the onion. Wash the parsley, shake dry, and finely chop, including the stems. Add both to the bowl and mix well. Per serving: Approx. 59 kcal.
