Wraps with goat cheese and cranberries

Ingredients for 2 servings:

  • 4 tortilla wraps
  • 200 g mushrooms
  • 50 g baby spinach
  • 150 g goat’s cheese
  • 4 tbsp cranberry compote
  • some fat for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Wash the baby spinach and drain well. Thinly slice the mushrooms and fry them in a pan with a little fat. Add 2 tablespoons of goat’s cheese. Season with salt and pepper and fry briefly. Warm the wraps briefly in the microwave. Cut a slit from the center to the edge with a knife. Mentally divide each wrap into quarters. Spread goat’s cheese on the first quarter. Distribute 1 tablespoon of cranberries on each of the second quarter. Add the baby spinach to the third quarter and the mushrooms to the last quarter. Now fold the quarters in one after the other to create a layered wrap with 4 overlapping quarters. Serve warm immediately. Note: We also like the wraps cold when on the go. For us, 2 wraps per person are enough for a small lunch or when on the go. If you know you tend to eat more, you should adjust the quantities accordingly.
