Broccoli, pepper, and apple salad with hemp seeds and peanuts

Ingredients for 2 servings:

  • 250 g broccoli
  • 1 bell pepper(s), red or yellow
  • 1 apple
  • 20 g hemp seeds
  • 20 g peanuts, unsalted
  • 3 tbsp linseed oil, alternatively rapeseed oil
  • 2 tbsp fruit vinegar
  • 1 tsp xylitol (sugar substitute) or erythritol, alternatively agave syrup or cane sugar
  • 1 tsp, heaped mustard
  • ½ tsp salt, iodized
  • ½ tsp pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Low carb, high protein, omega-3 fatty acids, vegan

Chop all solid ingredients as desired using a food processor or by hand, put them in a bowl, make a dressing from the remaining ingredients, mix everything together and season to taste.
