Jerusalem artichoke – apple – salad

Ingredients for 2 servings:

  • 200 g Jerusalem artichoke
  • 200 g apples
  • 1 tsp mustard
  • 50 ml orange juice
  • 100 ml olive oil
  • 1 pinch of salt
  • 1 pinch(s) of sugar
  • 1 pinch(s) of pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash the Jerusalem artichokes and apples thoroughly (do not peel). Slice them thinly with a fine grater and garnish the plate. Blend the remaining dressing ingredients thoroughly with a hand blender until creamy. Pour the dressing over the salad.
