Ingredients for 4 servings:
- 300 g carrot(s)
- 2 apples, crisp
- 100 g sunflower seeds
- 1 lemon(s)
- 2 tbsp sugar
- 200 ml water
- 1 tbsp oil

Soak the sunflower seeds in the water for about 1 hour. Peel the carrots and quarter the apples. Finely grate both, ideally using a food processor. Dissolve the sugar in the water and add it to the carrots along with the seeds and oil. Mix everything well. Squeeze the lemon and add just enough to achieve a pleasant balance between sweetness and acidity. It’s easy to prepare and will only improve with time to stand.
