Ingredients for 4 servings:
- 2 spring onions
- 200 g cheese, mature Brie
- 1 pinch of cardamom, ground
- 75 g quark (low-fat)
- 3 tbsp milk
- ½ tsp salt
- 3 tbsp sunflower oil
- 150 g flour
- ½ tsp baking powder
- 2 tbsp whipped cream
- 2 tbsp white sesame seeds

Working time approx. 40 minutes; Cooking/baking time approx. 18 minutes; Total time approx. 58 minutes
with fine Brie filling
Clean the spring onions and cut them into very fine rings. Remove the outer skin from the Brie and mash it finely with a fork. Mix the cardamom and onion rings into the Brie. Vigorously mix the quark, milk, salt and oil. Mix the flour and baking powder and knead them into the quark to form a smooth dough. Roll out the dough to about 3 cm thick (approx. 40 x 20 cm). Cut it into 4 triangles. Place the cheese filling on the bottom half of the triangles, roll up tightly towards the tip, press down slightly and bend into a croissant. Brush with a little cream and sprinkle with sesame seeds. Bake in a preheated oven at 180 degrees top/bottom heat for about 15-18 minutes until golden brown and crispy. Tip: It’s even quicker if you use ready-made puff pastry!
