Olive muffins with feta cheese

Ingredients for 1 servings:

  • 70 g olives, black, pitted
  • 200 g sheep’s cheese
  • 250 g flour
  • 1 tbsp rosemary, chopped
  • 2 ½ tsp baking powder
  • ½ tsp baking soda
  • some salt and pepper
  • 1 m.-sized egg(s)
  • 80 ml olive oil
  • 300 g natural yogurt

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes

Preheat oven to 180°C. Grease a muffin tin or line with paper baking cups. Thinly slice the olives. Cut 150g of feta cheese into cubes and crumble the remaining cheese. Combine the flour with the olives, rosemary, baking powder, baking soda, salt, and pepper. Mix the egg, yogurt, and oil. Stir the liquid ingredients into the flour mixture. Pour half of the batter into the tin and arrange the cheese cubes in the center. Fill with the remaining batter and sprinkle with the crumbled cheese. Bake for approximately 25-30 minutes. Serve warm or cold.
