Simple, slightly spicy or mild tomato rice from one pot

Ingredients for 4 servings:

  • 1 cup long grain rice
  • 1 m.-sized onion(s)
  • 1 garlic clove(s)
  • 2 tbsp Tomato paste, hot or normal
  • 2 m.-large tomato(s)
  • ½ can vegetable mix (peas, corn, peppers)
  • 2 cups water
  • 1 ½ tsp vegetable stock powder
  • 2 pinches of salt
  • 1 tsp, heaped gyro seasoning
  • pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Dice the onion, finely chop the garlic, and deseed and slice the tomatoes. Sauté the onions until translucent, then briefly roast the garlic and uncooked rice. Add the tomatoes and tomato paste and stir, allowing the paste to burn slightly. Pour in water and add the vegetable mix, vegetable stock powder, and salt. Simmer the tomato rice until the liquid has evaporated, stirring occasionally. Season the dish with gyro seasoning and pepper.
