Coconut muffins with banana

Ingredients for 1 servings:

  • 250 g flour
  • 1 packet of baking powder
  • 75 g desiccated coconut, fine
  • 180 g sugar
  • 250 ml mineral water
  • 160 ml oil, neutral, e.g. rapeseed oil
  • 1 drop of vanilla extract
  • 1 small banana(s)
  • ½ tsp salt
  • some chocolate coating, white
  • some desiccated coconut, coarse

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

vegan, for 12 pieces

Preheat the oven to 180°C (top/bottom heat). Sift the flour into a bowl and mix with the other dry ingredients. Add the mineral water, oil, and vanilla extract. Mash the banana with a fork and add it. Mix everything well. Line a muffin tin with baking cups and fill with the batter. Bake the muffins in the hot oven for about 20 minutes. Remove the muffins from the tin, let them cool, and garnish with chocolate coating and desiccated coconut, if desired.
