Ingredients for 2 servings:

  • 2 trout(s)
  • 6 garlic cloves
  • lemon juice
  • Salt
  • pepper
  • rosemary
  • Thyme
  • oregano
  • olive oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

on a bed of herbs with lots of garlic

Wash the trout thoroughly and pat dry. Drizzle with lemon juice, then season with salt and pepper. Stuff the trout with a few sprigs of fresh herbs. Line a roasting pan or baking sheet with aluminum foil and brush it with olive oil, then place the remaining herb sprigs on top. Now place the trout on the bed of herbs, sandwiching the garlic cloves between them. Cover with a second sheet of aluminum foil. Bake in a preheated oven at 180-200 degrees Celsius (top and bottom heat) for about 15-20 minutes. When the dorsal fin easily detaches from the fish, it’s cooked through. Serve with either potato salad or fried vegetable rice.
