Noodles with an Asian touch

Ingredients for 2 servings:

  • 250 g pasta of your choice
  • 2 tbsp olive oil
  • 100 g leek
  • 1 bell pepper(s), red
  • 250 g pineapple, fresh
  • 4 tbsp soy sauce
  • 2 tbsp vinegar
  • pepper
  • 1 handful of herbs (coriander, basil, chives, parsley…)

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Vegetarian, vegan, quick, cheap and easy to prepare

Slice the leek into thin rings or pieces. Cut the bell pepper into thin strips or pieces. Dice the pineapple. Cook the noodles until al dente. Heat oil in a pan. Sauté the leek and bell pepper. Add the pineapple cubes and fry lightly. Add soy sauce, vinegar, and pepper. Add the noodles to the pan and mix well. Add the herbs.
