Pasta with zucchini

Ingredients for 1 servings:

  • 2 tbsp olive oil
  • 1 small onion(s)
  • 1 thick zucchini
  • n. B. water
  • 1 tbsp vegetable broth
  • 200 g pasta with a short cooking time, e.g., capellini or wok noodles
  • salt and pepper

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

very simple one-pot dish for students

Heat the olive oil in a pan. Finely chop the onions and sauté in the olive oil. Halve the zucchini, cut into pieces, add to the pan and fry lightly. Pour in water. The top pieces of the zucchini should not be covered by the water. Season with stock, pepper, and salt. Simmer for a few minutes with the lid on the pan. It’s best to season a little more heavily, as the pasta will absorb a lot of the flavor later. When the zucchini become translucent, add the pasta and pour in hot water until the pasta is covered. Cook for a few minutes. When the pasta is al dente, drain the water and serve.
