Ingredients for 4 servings:

  • 4 lemon(s), organic
  • 150 g sugar
  • 300 ml water
  • 1 egg(s)

Instructions

Working time approx. 30 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 30 minutes

without ice cream maker

First, zest one or two lemons to make one and a half teaspoons. Combine the water, sugar, and a teaspoon of zest in a saucepan and bring to a boil. Stir everything together and simmer until the sugar dissolves. Then remove from the heat. Squeeze the lemons and beat the egg whites until stiff peaks form. Fold both ingredients into the sugar mixture and transfer to a bowl. Allow the sorbet to cool. Whisk the mixture thoroughly and place it in the freezer for 3-4 hours. Stir once every hour.
