Ingredients for 4 servings:
- 8 tbsp flour
- 4 tbsp sugar
- 4 m.-sized eggs
- 4 small pears
- 4 tbsp rum raisins
- 4 tbsp chocolate sauce
- butter
- 1 pinch of salt
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes
with rum raisins and chocolate sauce
Separate the eggs. Beat the egg whites until stiff peaks form. Beat the egg yolks with 3 tablespoons of sugar until frothy. Add the flour (adding a splash of mineral water if desired). Continue beating until a creamy batter forms, then fold in the beaten egg whites. Peel and core the pears, and slice them. Caramelize some sugar with a knob of butter in a non-stick pan. Add a quarter of the pears and sauté briefly. Sprinkle with 1 tablespoon of the rum raisins and 1 tablespoon of the chocolate sauce. Cover with about an eighth of the batter and cook until the top is bubbling. Turn the pancake over and cover the other side with a little more batter. Continue cooking until both sides are golden brown. Repeat with the remaining ingredients. Plate and serve.
