Ingredients for 1 servings:

  • 700 g potatoes, cooked
  • 4 tbsp butter
  • 2 egg yolks
  • ½ tsp salt
  • 1 pinch of nutmeg

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel the potatoes (preferably floury ones) and press them through a potato ricer. Combine with 2 tablespoons of butter, the egg yolks, salt, and nutmeg. Transfer the mixture to a piping bag and pipe rosettes onto a greased baking sheet. Drizzle the rosettes with 2 tablespoons of melted butter. Bake the duchess potatoes in the oven at 200°C (400°F) for about 20 minutes until golden brown. This batch makes enough for 20-25 potatoes.
