Sweet protein pancakes

Ingredients for 2 servings:

  • 2 eggs
  • 250 ml egg white
  • 30 g protein powder (Whey Protein Vanilla)
  • 1 packet of vanilla sugar
  • Sweetener or Stevia, optional
  • 1 tbsp spelt flour
  • 2 tbsp soy yogurt (yogurt alternative)
  • 1 tsp baking powder
  • 50 ml almond milk (almond drink)

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

First, mix the flour with the baking powder. Then add all the other ingredients to a bowl and beat with a mixer until fluffy. The vanilla sugar sweetens everything nicely, but if you like it a little sweeter, you can add more stevia or sweetener. Then add the flour-baking powder mixture and continue stirring until all the lumps are gone. The batter will be a bit runny, so don’t be surprised. It will become nice and firm and fluffy in the pan, though. Fry the pancakes in a pan over medium heat on both sides. I usually use a lid to fit the pan. This batter makes enough for 5 small pancakes – 106 kcal per pancake. The pancakes taste best after a night in the fridge, as this will reduce the strong flavor.
