Fried chanterelles à la Didi

Ingredients for 2 servings:

  • 250 g chanterelles
  • 2 large shallots
  • 1 m.-sized onion(s)
  • 1 tsp salt
  • 1 tsp pepper
  • 1 pinch(s) of sugar
  • 2 g butter

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Thoroughly clean the chanterelles (I use a new toothbrush for this). Cut the shallots and onion into cubes or small half rings. Sauté in a non-stick pan with a little butter and a pinch of sugar. In another pan, sauté the chanterelles with 20g of butter. Season with salt and pepper. Add the onions and shallots and continue sautéing until all the liquid has evaporated. Season again with salt and pepper and serve.
