Ingredients for 3 servings:

  • 500 g boiled potatoes from the previous day
  • 375 g low-fat curd cheese
  • 150 g flour
  • 65 g sugar
  • 1 egg(s)
  • 1 pinch of salt
  • 50 g raisins, optional
  • lemon zest

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Peel and grate yesterday’s potatoes, then combine them with the quark, flour, sugar, egg, and spices to form a dough. The dough shouldn’t be wet; if it’s too wet, add a little more flour. Finally, stir in the raisins and either roll the dough into a ball and slice it, or make small, flat cakes by hand and fry them in hot fat. Don’t fry the quark dumplings on the highest heat, as they’ll brown too quickly and won’t be cooked through. We serve them with apple sauce. Instead of sugar and raisins, you can also use salami and bacon cubes for savory quark dumplings.
