Baked plum pudding

Ingredients for 3 servings:

  • 250 g plums
  • 200 ml milk
  • 150 ml cream
  • 30 g sugar, or nB
  • 1 packet of vanilla sugar
  • 80 g flour
  • 3 eggs
  • e.g. powdered sugar

Working time approx. 15 minutes; Total time approx. 15 minutes

Dessert from the oven – similar to clafoutis

Wash, halve, stone, and cut the plums into fairly small pieces. Preheat oven to 190°C and line a tart or casserole dish with baking paper. Beat the eggs with the sugar and vanilla sugar for about 2 minutes until frothy. Add the milk and cream and mix well. Sift in the flour, stirring gently every now and then to avoid lumps. Pour the batter into the prepared dish. Divide the plum pieces into the batter. Carefully place the dessert in the oven and bake for about 30-40 minutes. Dust with powdered sugar, if desired, and serve warm or cold. Quick version: Use canned fruit and reduce the amount of sugar. For the glaze, place all ingredients in a measuring cup or similar container and beat with a hand mixer on high for about 3 minutes until no lumps remain. Then continue according to the recipe. Spicy idea: Season the icing with cinnamon, cloves and coriander instead of vanilla.
