Semolina pudding the easy way

Ingredients for 1 servings:

  • 50 g semolina (soft wheat)
  • 300 ml soy milk (soy drink) (vanilla flavor)
  • 200 ml water
  • n. B. Sweetener
  • some butter-vanilla flavoring
  • 1 tsp locust bean gum (approx. 5 g)
  • 1 tsp, heaped baking powder

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Delicious semolina pudding with soy-vanilla drink and carob bean gum, very large portion for only 340 kcal

Bring the soy vanilla drink, water, butter vanilla flavoring, and sweetener, if desired, to a boil in a saucepan. Then add the semolina and let it swell over low heat for about 10 minutes, stirring occasionally. Then place the pan in a cold water bath and beat the semolina pudding with a hand mixer on high. Add the locust bean gum and baking powder and beat for about another 5 minutes. The semolina pudding will cool, become beautifully creamy, and take on a light pudding-like consistency. Thickened sour cherries, bananas, or any other fruit go well with it. This batch is easily enough for two people or for a hearty meal. Especially delicious: Crumble an Oreo cookie over the top.
