Ingredients for 4 servings:
- 1 avocado(s)
- ½ bunch basil
- Pine nuts, roasted
- 50 g Parmesan, grated
- 1 garlic clove(s)
- 1 tbsp olive oil, approx., possibly more
- e.g. water (cooking water from the pasta)
- 1 dash of lemon juice
- n. B. Salt and pepper, to taste
- 250 g pasta
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
my favorite
Peel and pit the avocado. Pick and wash the basil. Combine all ingredients (except the grated Parmesan) in a tall bowl and puree with an immersion blender. Finally, stir in the grated cheese and season with salt and pepper. Cook the pasta. If you prefer it a little thicker, you can dilute the pesto with the pasta cooking water.
