- 1 m.-sized avocado(s), ripe
- 100 g Greek yogurt, alternatively 70 g coconut milk
- 4 tbsp rice syrup, alternatively sweetener of your choice
- 1 lime(s), juice and zest
- 1 handful of mint, fresh

Popsicle with Greek yogurt
You’ll also need suitable popsicle molds and popsicle sticks. Cut open the ripe avocado, remove the pit, and scoop out the flesh. Pour the mixture into a tall container. Next, add the yogurt, mint, rice syrup, and lime juice and zest. Blend everything with an immersion blender (or a blender) until creamy. Divide the cream between the popsicle molds and shake slightly to ensure the popsicles are evenly distributed. Then insert the popsicle sticks and place everything in the freezer. The popsicles are best frozen overnight. Tips: Remove the popsicles from the freezer a few minutes before serving and let them thaw. If you like, you can garnish the popsicles with grated nuts or chopped chocolate. Swap the mint for other herbs, such as basil, for a completely different flavor. If you don’t have popsicle molds, you can also use a suitable container. Scoop into balls with a spoon, arrange them in a bowl, and serve with fruit.
